Our tour will begin on the farm with a welcome drink. While relaxing in a shaded part of the farm, I will present our community movement and teach you about how we grow our organic produce. After enjoying the welcome drink, we will walk along the community farm and learn about organic farming and the unique UNESCO- protected Subak System in Bali. During the farm tour, we will pick the ingredients that we are going to use during the cooking class for a true farm to table cooking experience. Once we arrive at the centre of the community, Mai Organic farm, we will drink a refreshing juice made with vegetables and fruit from our local farms. Following the drink, we will prepare six Balinese dishes, such as tuna sate and corn fritters. Students are able to participate as much or as little as they would like. I invite you to enter my atelier normally not accessible. A local fluent translator will help me in explaining details about wagashi ingredients, motifs, and technique! First you will learn about basic ingredients, materials and tools for making wagashi using visual chart, and I will demonstrate the basic skills step by step for you to follow and do the same way by modelling, moulding, and shaping your own Japanese sweet. You can learn not only the basic skills of making, but also the beauty of Japanese traditional colours used and how I express seasons in the design of the "sweets". Don't worry, you can take your time at your own pace, and focus on getting inspiration and enjoying the making! When some difficult techniques needed, of course I will help you.　:-)　 Also, you can ask me to take photos of your making as you have to keep your hands clean!
